Herb Flatbread

Ingredients
- 250 g wheat flour
- 0.5 cube Yeast
- 0.5 tsp Salt
- 125 ml lukewarm water
- 5 tbsp olive oil
- Sea salt
- Parsley (chopped)
- 2 tbsp cheese (grated)
Instructions

Whisk the yeast into the water until smooth. Add flour, salt and 3 tbsp olive oil to a bowl, pour in the dissolved yeast and knead to form a smooth dough; it should not stick to the bowl.

Leave covered in a warm place until it has roughly doubled in size (about 45 min).

On a floured surface knead the dough again and shape into a thick roll. Cut into about eight pieces and roll each thinly, as round as possible, with a little flour.

Turn these in chopped parsley mixed with cheese, pressing lightly to coat.

Heat a large non‑stick pan (not too hot) and bake the dough circles one at a time from both sides until golden brown with a few drops of oil. Sprinkle with sea salt. Cool on a rack.

Repeat until all dough is used.
