Ingredients

  • 400 g beef (e.g., sirloin)
  • 2 tbsp sesame oil
  • 200 g sausages (small pork sausages)
  • 200 g Asian egg noodles
  • 2 onions
  • 1 tsp ginger (freshly grated)
  • 1 bunch scallions
  • 4 Garlic cloves
  • 1 tsp miso paste
  • fish sauce
  • Cayenne pepper

Instructions

    Wash the meat, pat dry and cut into cubes. Peel and finely chop the garlic. Add 2-3 tbsp fish sauce and ginger to the meat, mix well and let marinate overnight if possible.

    Cut the sausages into pieces.

    Peel the onions and slice into strips.

    Wash and trim the scallions, then slice into strips as well.

    Sauté the meat in hot oil, add the onions and miso paste, then deglaze with about 1 l water. Simmer gently for about 30 minutes. Add the sausages and scallions and simmer for another 20 minutes. Finally add the noodles, let them cook through, adding more water if needed. Season with fish sauce and cayenne pepper before serving.
