Ingredients

  • 600 g kohlrabi including leaves (3 kohlrabi bulbs)
  • 800 ml vegetable broth
  • 200 g strong blue‑veined cheese
  • 150 g Sour cream
  • Nutmeg (freshly grated)
  • pepper (ground)
  • 1 splash Lemon juice
  • 2 tbsp finely chopped parsley

Instructions

    Peel the kohlrabi and cut lengthwise in half. Cook the halves in a little vegetable broth with salt for 15‑20 minutes until firm, then let cool. Hollow out each half with a melon baller, leaving a 1.5 cm rim. Cut ¼ of the removed flesh into small pieces; use the rest elsewhere.

    Crush the blue‑veined cheese and whisk it smooth with sour cream. Season with nutmeg, pepper, and a splash of lemon juice. Fold in the kohlrabi pieces. The cream should be firm enough to hold its shape.

    Fill the cheese mixture into the kohlrabi halves and press lightly. Slice the filled kohlrabi into 3‑4 strips, sprinkle with parsley, and insert toothpicks. Serve the strips on a bed of kohlrabi leaves.
