Ingredients
- 4 slices crispbread
- Salt
- 1 tbsp coarsely chopped dill
- Pepper
- 2 tbsp lemon juice
- 4 cooked potatoes (from yesterday)
- 100 g gravlax (or smoked salmon)
- 0.5 shallot
- tarragon leaves (for garnish)
- 1 tsp clarified butter
- 25 g parmesan (to sprinkle)
Instructions

Peel the potatoes and cut them into large cubes. Cut the salmon into strips or pieces. Peel the shallot and finely chop it.

Sauté the shallot cubes in clarified butter until golden yellow, remove them, add the potatoes and fry until golden yellow (do not brown too much; they should just get hot). Stir the shallots back in and season with salt, pepper, and dill.

Break the crispbread into pieces. Gently mix the salmon into the potato mixture and pile the salmon salad onto the crispbread pieces. Drizzle each with a few drops of lemon juice, sprinkle with tarragon and parmesan, and serve immediately.
