Ingredients

  • 1 tsp butter (for greasing the pan)
  • 2 tbsp almond flakes
  • 250 g softened butter
  • 150 g coconut blossom sugar
  • 6 Eggs
  • 500 g whole wheat flour
  • 1 packet baking powder
  • 0.125 l milk (3.5% fat)
  • 1 Lime
  • 100 g dried fruit (apple, pear, apricot)
  • 2 tbsp raisins
  • Powdered birch sugar for dusting

Instructions

    Grease the pan well and sprinkle with almond flakes.

    Cream butter with coconut blossom sugar. Gradually fold in eggs until the sugar dissolves.

    Sift flour and baking powder together, add to the batter, mix, then add 4 tbsp of milk, sift more flour over it, and continue until a smooth dough forms.

    Zest and juice the lime, dice the dried fruit into small cubes. Mix lime juice, raisins, and fruit into the batter. Pour the batter into the pan, spread evenly, and bake in a preheated oven at 175 °C (fan 150 °C; gas: level 2) for about 50 minutes. Let it cool slightly, then turn out onto a wire rack to cool completely. Dust with powdered birch sugar before serving.
