Kassler and Sauerkraut

Hearty and warming is the simple Spoonsparrow dish for Kassler and sauerkraut.

Ingredients

  • 1 onion
  • 1 apple
  • 1 Tbsp clarified butter
  • 600 g sauerkraut
  • 200 ml dry white wine
  • 200 ml apple juice
  • 1 bay leaf
  • 0.5 tsp Peppercorns
  • 0.5 tsp juniper berries
  • 1 kg Kassler (whole; bones cut open)
  • Salt
  • Pepper

Instructions

    Peel and dice the onion. Peel, quarter the apple, remove the core, and dice the quarters.

    Sauté the onions in hot clarified butter until translucent. Drain the sauerkraut well, then add it with the apples, white wine, apple juice, bay leaf, peppercorns, and juniper berries to the pot. Rinse the Kassler and place it in the kraut. Cover and simmer gently for about 1 hour.

    Slice the meat before serving. Season the kraut with salt and pepper and serve alongside the Kassler.
