Ingredients

  • 2 kg ham (gammon joint)
  • 1 onion
  • 1 Carrot
  • 1 stalk leek
  • 1 tsp peppercorns
  • 1 tsp coriander seeds
  • 2 Bay leaves
  • 1 cinnamon stick
  • 2 oranges
  • 1 tbsp cloves
  • 125 g jam (e.g., orange)
  • 30 g coarse mustard
  • 1 tsp brown sugar

Instructions

    Place the ham to cook, basting as needed, in a large pot. Wash and clean the onion, carrot, and leek, or peel and roughly cube them. Add peppercorns, coriander, bay leaves, and cinnamon to the meat. Pour cold water over until the meat is well covered. Bring to a boil and simmer covered for about 2.5 hours. Slice the oranges into rounds.

    Lift the cooked ham from the broth and let it cool slightly. Then remove the kitchen twine and peel off the rind. Thread the remaining thin fat layer with orange slices and spice cloves. Place the ham in a roasting pan.
