Kartoffelklöße

Ingredients
- 2 slices white bread
- 2 tbsp butter
- 1 kg waxy potatoes (cooked the day before)
- 220 g potato starch
- Salt
- nutmeg
- 2 Eggs

Remove crusts from the white bread, cut into small cubes and fry in hot butter until golden brown; remove and drain on kitchen paper.

Peel the potatoes and grate finely into a bowl. Mix with the starch and pour over 100 ml hot water. Add the eggs and season well with salt and nutmeg. Stir everything with a cooking spoon into a smooth, silky dough. If needed, add more starch. Shape into dumplings, press lightly flat, fill each with 2–3 bread cubes, then reshape into dumplings again.

Slide the dumplings into boiling salted water and let them cook gently for about 20 minutes on low heat (do not boil). Remove with a slotted spoon and serve.
