Half-and-Half Potato Dumplings

Ingredients

  • 3 kg potatoes (starchy cooking)
  • 2 old rolls
  • 2 EL Butter
  • Salt

Instructions

    Peel, wash potatoes and place in cold water.

    Cut 1 kg into pieces and cook uncovered for about 30 minutes until mashed without salt.

    Meanwhile grate remaining potatoes and press the mixture through a kitchen towel over a bowl, then transfer to a large bowl and loosen slightly.

    When starch settles from the pressed potato water, pour off the water and add the starch back to the potato mash.

  5. 5.

    Then stir the hot cooked potato mash through a sieve into the raw mixture, mix well, season with salt, work until smooth. The dough should be supple, bind well, and release from the bowl edges.

    Bring plenty of salted water to boil in a large pot.

  7. 7.

    With damp hands form 12 dumplings, placing some toasted bread cubes in the center of each.

    Drop dumplings into boiling salted water, reduce heat and simmer for about 25 minutes; do not let them boil further!

    Remove finished dumplings and serve in a preheated bowl.
