Ingredients

  • 2 kg starchy boiling potatoes
  • 2 slices white bread
  • 2 tbsp butter
  • Salt

Instructions

    Peel, wash the potatoes and place them in a bowl with cold water. Remove about one third and cook in a pot, almost covered with water, for about 40 minutes until the potatoes fall apart.

    Drain the white bread, cut it into small cubes and fry in hot butter until golden yellow all around; remove and drain on kitchen paper.

    Sift the potato mash through a fine sieve and keep warm over a hot water bath.

    Peel the remaining potatoes, grate finely and squeeze well with a strong cloth. Catch the juice and wait until the starch settles, then pour off the water and add the starch to the squeezed potatoes. Gradually stir in the hot potato mash while stirring vigorously and fold it in. Season with salt and beat until the tough dumpling dough lifts from the bowl edge. Shape into dumplings, flatten, fill each with 2-3 bread cubes and roll back into dumplings. Place in boiling salted water and let cook gently for about 25 minutes (do not boil). Lift with a skimmer spoon and serve.
