Kale with Potatoes

Ingredients

  • 500 g waxy potatoes
  • 200 ml whipping cream
  • 150 ml Vegetable broth
  • 1 bay leaf
  • Salt
  • 300 g Kale
  • 1 Parsnip
  • vegetable oil (for frying)
  • 1 tbsp butter
  • nutmeg
  • chili oil (to drizzle)

Instructions

    Peel, wash and dice the potatoes. Bring the cream with the broth and bay leaf to a boil. Season with salt and scatter in the potato cubes. Cover and simmer for about 15 minutes until cooked. A little liquid should remain; add more broth if needed.

    Wash, trim and cook the kale in salted water for about 10 minutes. Then shock it, drain well and chop.

    Peel the parsnip and slice lengthwise into thin rounds or shave. Pat dry and fry in hot oil for 2-3 minutes. Drain on paper towels and lightly salt.

    Sauté the kale in hot butter and season with salt and nutmeg.

    Season the potatoes with salt and nutmeg, remove the bay leaf and arrange the potatoes and kale on plates. Drizzle with chili oil and serve garnished with chips.
