Caribbean-Style Beef Steak with Apricot Salad

Ingredients
- 4 beef steaks about 180 g each (e.g., rib-eye or round)
- 500 g apricots
- 1 tsp Raw Sugar
- 20 ml dark rum
- 3 tbsp chili oil
- 1 tsp grated ginger
- juice of one lime
- 1 onion
- 2 chili peppers
- 0.5 tsp allspice berries
- Salt
- coriander leaves for garnish

Wash and pat steaks dry. Mix 2 tbsp chili oil with ginger and half the lime juice, marinate steaks in mixture for about 2 hours.

Wash apricots, halve them, remove pits, slice into strips. Toss with rum and remaining lime juice. Crush allspice berries in a mortar, add to salad and season with salt.

Peel onion, dice finely, sauté in remaining oil until translucent. Wash chili peppers, cut lengthwise, deseed, slice into thin strips. Add sugar to onions and cook together until golden brown.

Remove steaks from the marinade, season with salt, grill or pan‑fry each side for 1–3 minutes (adjust to preference). Let rest briefly, then plate with sautéed onions. Top with apricot salad and garnish with coriander.
