Kale Potato Stew

Ingredients

  • 1 kg starchy boiling potatoes
  • 300 g Kale
  • 1 chorizo (paprika sausage)
  • crushed broth
  • olive oil
  • Salt
  • garlic

Instructions

    Peel the potatoes and cut them into small cubes. Place in a pot and cover with water. Add 1 tsp salt and a generous splash of olive oil, then bring to a boil.

    Meanwhile, slice the kale into strips and rinse well until the water only turns slightly greenish. Cook the potatoes for about 20 minutes. Taste, add crushed broth if desired, another splash of olive oil, and the kale. Simmer for an additional ten minutes until the kale is tender yet firm.

    Serve in bowls, adding a few slices of paprika sausage and garlic to each bowl before serving.
