Ingredients

  • 1 kg kale
  • Salt
  • 4 medium onions
  • 60 g pork lard (or goose lard)
  • broth (instant product)
  • 2 cloves
  • 300 g smoked whole bacon
  • 500 g ribs (from smoked pork)
  • 500 g small potatoes
  • 4 cooking sausages
  • Pepper
  • 70 g sugar
  • 70 g breadcrumbs
  • 3 tbsp oil

Instructions

    Wash the kale, strip off the ribs and remove any stems. Blanch in boiling salted water, shock in cold water and roughly chop.

    Peel and roughly chop the onions. Heat the fat, sauté the onions, add the kale and briefly brown it as well. Pour broth over the kale and add cloves.

    Add bacon and smoked pork to the kale and cook covered for about 1½ hours on low heat.

    Brush potatoes clean and boil in salted water for about 20 minutes. Then drain the potatoes, peel them and set aside. Add the cooking sausages or minced meat sausage 30 minutes before the end of the cooking time. Season the kale with pepper and salt.

    Mix sugar with breadcrumbs and toss the potatoes in it. Heat oil in a pan and fry the potatoes until golden brown.

    Separate the smoked pork from the bone and slice it. Slice the bacon as well. Serve the kale with sliced smoked pork, bacon, cooking sausages and roasted potatoes. Offer mustard with the meat.
