Kaiserschmarrn with Pear Slices

Ingredients
- 2 Eggs
- 50 g delicate oat flakes (5 Tbsp)
- 60 g spelt whole‑grain flour (4 Tbsp)
- 30 g maple syrup (2 Tbsp)
- 1 pinch salt
- 100 ml milk (3.5% fat)
- 1 pear
- 3 Tbsp apple juice
- 1 star anise
- 1 cinnamon stick
- 30 g butter (2 tbsp)
- 1 pinch cinnamon
Instructions

Separate the eggs. Whisk yolks with oat flakes, flour, 1 Tbsp maple syrup, salt and milk; let rest for 10 minutes.

Meanwhile, peel, wash, halve, core and cut the pear into strips. In a small pot combine the pear slices with apple juice, remaining maple syrup, star anise and cinnamon; bring to a boil once and set aside.

Beat the egg whites until stiff, then fold into the yolk‑oat mixture. Heat 1 Tbsp butter in a pan and pour in the batter. Cook over low to medium heat for about 5 minutes, flip the batter and cook another 5 minutes.

Divide the pancake with two spatulas. Add the remaining butter, sprinkle with cinnamon, and fry while turning for an additional 2–3 minutes. Serve the Kaiserschmarrn with the pear slices.
