Juicy Sheet Cake Apple

Ingredients
- 150 g butter
- 80 g coconut blossom sugar
- 4 eggs
- 70 g ground almond kernels
- 200 g Spelt flour Type 1050
- 2 tsp cinnamon powder
- 600 g apples
- 100 ml milk (3.5% fat)
- 1 pinch Vanilla powder

Whisk the butter with the coconut blossom sugar, then add the eggs one by one. Add the ground almonds and flour and mix with the cinnamon. Spread this dough with wet hands on a baking sheet lined with parchment paper, about 20x30 cm, shaping it so that the edge is roughly a finger’s width high.

Peel and halve the apples, remove the core, and slice the flesh into wedges. Generously distribute the apple slices over the cake. Whisk the remaining eggs with milk and vanilla powder and pour over the apples. Bake in a preheated oven at 225 °C (convection: 200 °C; gas: level 3–4) for about 25 minutes. Remove and, once the cake has cooled to lukewarm, cut and serve.
