Apfelmus Napfkuchen

- 250 g softened butter
- 150 g whole cane sugar
- 4 eggs
- bio lemon zest
- 500 g spelt flour type 1050
- 1 packet baking powder
- 100 g apple sauce

Beat the butter with the whole cane sugar until fluffy. Crack in the eggs one at a time, folding each into the mixture. Stir in the lemon zest. Mix in the spelt flour and baking powder together, then fold them into the batter. Finally, fold in the apple sauce; if needed, add a splash of milk to reach a thick but pourable consistency.

Pour the batter into a greased pan if necessary, smooth the top, and use a fork to make a circular pattern across the surface—this prevents the cake from cracking during baking. Bake in a preheated oven at 180 °C (160 °C fan or gas level 2–3) for 60–70 minutes, checking with a skewer. Once done, let it cool in the pan, then release and dust with powdered sugar as desired.
