Juicy Meatballs

Ingredients

  • 1 stale roll
  • 1 handful mixed herbs (parsley, arugula, basil)
  • 1 Carrot
  • 1 onion
  • 1 Garlic clove
  • 1 red chili pepper
  • 4 tbsp Vegetable oil
  • 500 g mixed ground meat
  • 1 egg yolk
  • 1 tsp orange zest
  • Salt
  • ground black pepper

Instructions

    Soak the roll in lukewarm water.

    Rinse the herbs, shake dry and finely chop. Peel and grate the carrot. Peel and dice the onion and garlic. Rinse, trim and dice the chili. Sauté the onion, garlic and chili in 1 tbsp hot oil until translucent. Add the grated carrot and cook briefly more. Mix the sautéed vegetables with the well‑pressed roll, ground meat, egg yolk, orange zest, herbs, salt and pepper; knead into a firm dough.

    With wet hands shape small patties (about 5 cm diameter) and fry slowly in the remaining hot oil for about 10 minutes until golden brown on all sides.

    Serve the juicy meatballs warm or chilled with lemon wedges and pepperoni as desired.
