Juicy gingerbread with walnuts from Spoonsparrow tastes not only great but also much healthier than the store-bought version.
Ingredients
- 120 ml maple syrup
- 450 ml oat milk
- 450 g unsweetened plum jam
- 10 g cocoa powder (2 tbsp; strongly defatted)
- 1 pinch salt
- 1.5 tbsp gingerbread spice mix
- 400 g spelt whole‑grain flour
- 0.5 tbsp baking soda
- 0.5 sachet baking powder
- 42 walnut halves
Instructions

Whisk together maple syrup, oat milk and plum jam. Stir in cocoa powder, salt and gingerbread spices.

Sift the flour with baking soda and baking powder. Fold into the wet mixture until a smooth dough forms.

Spread the dough onto a parchment‑lined baking sheet, flatten it, and arrange walnut halves on top. Bake at 180 °C (fan) for about 20 minutes in a preheated oven.
