Fruit Cake Without Sugar

Ingredients

  • 400 g dried figs
  • 400 g dried fruit (e.g., plums, apricots, raisins)
  • 400 g nuts (e.g., hazelnuts, almonds, walnuts)
  • 5 eggs
  • 125 g butter
  • 200 g Spelt flour Type 1050
  • 1 tbsp cinnamon
  • 1 pinch clove (peeled)

Instructions

    Coarsely chop figs, dried fruit, and nuts. Separate the eggs; beat the whites very stiffly. Whip the butter until fluffy, then add the yolks and flour to make a smooth batter. Fold in the fruit, nuts, and spices. Gently fold in the beaten egg whites.

    Pour the batter into a loaf pan lined with parchment paper, level the surface, and bake at 175 °C (150 °C fan; gas: level 2) for about one hour. Perform a toothpick test to check doneness.
