Ingredients
- 400 g dried figs
- 400 g dried fruit (e.g., plums, apricots, raisins)
- 400 g nuts (e.g., hazelnuts, almonds, walnuts)
- 5 eggs
- 125 g butter
- 200 g Spelt flour Type 1050
- 1 tbsp cinnamon
- 1 pinch clove (peeled)

Coarsely chop figs, dried fruit, and nuts. Separate the eggs; beat the whites very stiffly. Whip the butter until fluffy, then add the yolks and flour to make a smooth batter. Fold in the fruit, nuts, and spices. Gently fold in the beaten egg whites.

Pour the batter into a loaf pan lined with parchment paper, level the surface, and bake at 175 °C (150 °C fan; gas: level 2) for about one hour. Perform a toothpick test to check doneness.
