Johannisbeerquiche

- 250 g quark
- 200 g Cream cheese
- 0.5 sachet vanilla pudding powder
- 80 g sugar
- 0.5 untreated lemon (zest)
- 2 Eggs
- 200 g currants
- 2 tbsp vanilla sugar

Sift flour onto the work surface and form a well in the center. Distribute butter pieces around the edge of the flour. Add sugar, salt, and egg to the center and crumble with a fork. Quickly knead into a smooth dough by hand, wrap in cling film, and chill for about 30 minutes.

Preheat oven to 180°C fan. Line tart tin with parchment paper.

For the filling whisk quark with cream cheese, vanilla pudding powder, sugar, lemon zest, and eggs. Rinse currants, strip from stems, and pat dry. Mix in vanilla sugar.

Roll out dough on a lightly floured surface slightly larger than the tin. Line the tin with the dough.

Spread the cream over the base of the dough and scatter the berries on top. Press the edge of the dough inward and bake the tart for about 45 minutes until golden brown.

Remove from oven and cool in the tin. Carefully lift out and let cool completely on a wire rack.
