Jerusalem Artichokes with Garlic in the Pan

Ingredients

  • 800 g Jerusalem artichokes
  • olive oil
  • Sea salt
  • freshly ground pepper
  • 6 Garlic cloves
  • 2 tbsp chopped walnuts
  • 2 tbsp chopped sage

Instructions

    Preheat the oven to 180°C (350°F) with both fan and top heating.

    Wash, brush, and pat dry the Jerusalem artichokes. Place them in a pan or roasting dish and drizzle with olive oil. Season with salt and pepper and roast in the oven for about 20 minutes, turning occasionally. While they roast, crush the garlic cloves and add them along with the walnuts and sage to the Jerusalem artichokes. Roast together for another 10–15 minutes, turning again as needed.
