Roasted Jerusalem Artichokes

Roasted Jerusalem artichokes are a perfect after-work recipe – quick to make, healthy and with fresh ingredients.
Ingredients
- 800 g Jerusalem artichokes
- 2 red onions
- 4 tbsp olive oil
- Sea salt
- black pepper (freshly ground)
- 2 sprigs Rosemary

Preheat the oven to 160°C fan.

Peel the Jerusalem artichokes and either leave them whole or halve them lengthwise. Peel the onions and cut into wedges. Toss both with olive oil and season generously with sea salt and black pepper. Spread on a baking sheet and roast in the oven for about 45 minutes until golden brown and tender, turning occasionally. During the last 10 minutes sprinkle the rosemary over the vegetables.

Serve with a sour cream dip flavored with green pepper to taste.
