Japanese Vegetable Noodles

Ingredients

  • 350 g soba noodles
  • 1 handful sprouts
  • 2 bell peppers (red and yellow)
  • 2 carrots
  • 1 Zucchini
  • 2 cm ginger
  • 1 Garlic clove
  • 2 tbsp sesame oil
  • 3 tbsp Soy sauce
  • 1 tbsp chili sauce

Instructions

    Cook the noodles according to package instructions.

    Rinse the sprouts and drain well.

  3. 3.

    Wash, halve, and trim the bell peppers.

  4. 4.

    Peel the carrots, wash the zucchini, trim, and cut all into fine strips. Peel ginger and garlic and finely chop both.

    Combine in a hot wok with oil and sauté until translucent.

    Add the vegetables and stir‑fry for 2–3 minutes.

    Shock the noodles, drain well, add to the wok, sprinkle sprouts on top, and briefly cook together.

    Season the Japanese vegetable noodles with soy sauce and chili sauce and serve.
