Orange Sticks in Chocolate Coating

Ingredients
- 250 g orange zest (unprocessed)
- 50 g dextrose
- 200 g sugar
- 125 g dark chocolate couverture

Wash the orange zest, pat dry and cut into strips about 1 cm wide. Place the strips in a pot, cover with water, simmer for 10 minutes, remove and drain well. Stir the cooking liquid with dextrose and sugar. Heat the sugar syrup to 110 °C and pour over the orange strips. Drain the syrup after 24 hours, reheat to 110 °C (using a thermometer) and pour again over the strips. Repeat this process at least four more times. Finally drain the strips, let them dry on foil for at least 24 hours.

Melt and temper the chocolate couverture, dip the orange sticks about halfway. Lay on parchment paper to set.
