Ingredients

  • 150 g soft butter
  • 150 g sugar
  • 2 tbsp vanilla sugar
  • 1 pinch salt
  • 2 egg yolks
  • 100 g ground almonds (peeled)
  • 200 g Flour
  • 150 g jam (to taste)

Instructions

    Beat the butter with the sugar, vanilla sugar, salt and egg yolks. Mix in the almonds and flour and knead into a dough. Shape the dough into two 3 cm diameter rolls, wrap in foil and chill for 2 hours.

    Preheat the oven to 200°C. Line a baking sheet with parchment paper. Cut 2 cm thick slices from the dough rolls, shape into balls and press a small indentation into each ball with a spoon handle. Place the cookies on the baking sheet and bake on the middle rack for about 12-15 minutes until golden yellow. Remove and cool.

    Fill the indentations of the cookies with lightly warmed and smooth jam using a small spoon and let dry well. Store the cookies in an airtight container.
