Jam Cookies

Ingredients
- 500 g flour
- 250 g cold butter
- 125 g sugar
- 1 pinch salt
- 2 Eggs
- jam (as desired)
- 2 egg yolks
- powdered sugar (for dusting)

Sift the flour onto a work surface, mix with salt and sugar, then press a well into the center. Cut the cold butter into small pieces and distribute around the well; add an egg to the center and use a knife to cut through all ingredients until small dough crumbs form. Quickly knead with hands into a dough, shape into a ball, wrap in cling film and refrigerate for about 30 minutes.

On a floured surface flatten the dough and roll it out to about 4 mm thickness.

Using cookie cutters of the same shape but different sizes, cut an equal number from the dough. Punch a hole in the center of the smallest cookies.

Whisk egg yolk with 1 tablespoon water; brush medium and small cookies from below, stack them, place a small dollop of jam on the rounded part, and bake in a preheated oven at 180°C for about 12 minutes until pale yellow. Remove, let cool, then dust with powdered sugar.
