Italian Zabaione

Ingredients

  • 6 egg yolks
  • 50 g raw cane sugar
  • 100 ml Marsala wine
  • 4 ladyfingers
  • 200 g Raspberries

Instructions

    Cover the bottom of the dessert glasses with raspberries. Set aside a few for garnish. Whisk the egg yolks and sugar until frothy with a whisk. Then, over a hot water bath, stir until creamy white, gradually adding the Marsala (be careful not to let it get too hot).

    Remove from the water bath, continue stirring briefly, then pour into the prepared glasses. Serve garnished with ladyfingers and raspberries.
