Ingredients
- 1 eggplant
- Salt
- 1 Zucchini
- 200 g Cherry tomatoes
- 1 onion
- 1 Garlic clove
- 4 tbsp olive oil
- 1 tbsp Lemon Juice
- Salt
- Pepper
- 1 ciabatta loaf (about 300 g)
- 30 g Pecorino cheese
- Basil

Slice the eggplant into about ½ cm thick rounds. Salt them and let soak in water while you set aside. Wash, trim, and slice the zucchini lengthwise into thin half‑moon shapes. Wash and halve the cherry tomatoes. Peel the onion and garlic clove; cut the onion into thin rings. Rinse the eggplant slices.

Whisk together olive oil and lemon juice, then press in the garlic clove. Season with salt and pepper. Toss the vegetables with this mixture.

Heat the grill and cook the vegetables for about 10 minutes. While they grill, slice the ciabatta loaf into four pieces and cut each piece open lengthwise.

Distribute the grilled vegetables over the ciabatta slices, shave pecorino cheese on top, and garnish with basil leaves.
