Ingredients

  • 2 bunches large spring onions
  • 2 Bay leaves
  • 5 cloves of mace
  • 1 tsp juniper berries
  • 0.25 l red wine vinegar
  • 0.125 l water
  • 1 tbsp sugar
  • 1 sprig fresh tarragon

Instructions

    Clean and wash the spring onions, then blanch them in boiling water for about 5 minutes.

    Place the onions in a jar. Combine spices, vinegar, water, and sugar in a pot and bring to a boil.

    Pour the hot vinegar brine over the spring onions. Seal the jar and let it steep for about one week.
