Ingredients

  • 400 g eggplant
  • Salz
  • 1 Zwiebel
  • 2 Knoblauchzehen
  • 2 EL Olivenöl
  • 400 g stückige Tomaten (Dose)
  • 150 ml Tomatensaft
  • 0.5 TL getrockneter Thymian
  • 0.5 TL getrockneter Oregano
  • Pfeffer (aus der Mühle)
  • Zucker
  • 400 g Paccheri
  • 125 g Mini-Mozzarellakugel
  • 0.5 Handvoll Basilikum
  • 30 g geriebener Parmesan

Instructions

    Wash, clean and cut the eggplant into ~1 cm wide strips lengthwise, place in a large colander, sprinkle with salt and weigh down with something heavy (e.g., a bowl of water). Let it sit for about 30 minutes to draw out moisture. Pat the slices dry with kitchen paper and dice them small.

    Peel and finely dice the onion and garlic. In a pot, sauté in 2 EL hot olive oil until translucent. Add the eggplant, stir and cook for 1-2 minutes in the remaining oil, then pour in the tomatoes and tomato juice. Season with thyme, oregano, salt, pepper and a pinch of sugar. Simmer covered for 8-10 minutes.

    Cook the Paccheri in plenty of boiling salted water until al dente. Drain and set aside. Drain the mozzarella, add it to the sauce, taste again, then combine with the pasta. Plate on four bowls, sprinkle with chopped basil and grated Parmesan, and serve.
