Italian Turkey Rolls

The Italian turkey rolls from Spoonsparrow taste delicious again and again while providing healthy nutrients and protein.

Ingredients

  • 250 g frozen spinach cream
  • 50 g ricotta
  • 4 tbsp grated Parmesan
  • 1 egg yolk
  • 4 thin turkey cutlets
  • Salt
  • white pepper
  • 1 tbsp flour
  • 1 Garlic clove
  • 2 tbsp clarified butter
  • 1 tbsp Olive Oil
  • 400 g pizza tomatoes (1 can)
  • 1 tbsp chopped basil

Instructions

    Place spinach in a pot, melt over medium heat and let cool. Then mix with ricotta, parmesan and egg yolk.

    Wash turkey cutlets, pat dry and flatten with palm. Season with salt and pepper and spread thinly with the spinach mixture. Roll up the cutlets and secure ends with toothpicks. Dust rolls thoroughly with flour.

    Peel garlic and finely chop. Heat clarified butter in a pan. Brown the turkey rolls over medium heat for about 10 minutes until crisp brown.

    Simultaneously heat olive oil and sauté garlic. Add pizza tomatoes and simmer on high heat for about 10 minutes, seasoning with salt and pepper. Stir in basil. Plate the Italian turkey rolls with tomato sauce on four plates and serve immediately.
