Ingredients
- 800 g Entrecôte (4 Entrecotes)
- 2 EL vegetable oil
- Salt
- Pepper (freshly ground)
- 600 g cooked potatoes (from yesterday)
- 3 EL clarified butter
- 1 EL Butter
- 100 ml heavy cream
- 2 TL Dijon mustard
- 1 TL Worcestershire sauce

Wash and pat the meat dry. Peel the potatoes, slice thinly, and fry them in clarified butter until crisp on both sides. In a heavy skillet (preferably a grill pan) heat the oil and sear the steaks for 3-4 minutes per side. Season with salt and pepper and set aside warm.

Add butter to the pan drippings and melt over low heat. Pour in cream, stirring briefly until frothy. Stir in mustard and Worcestershire sauce, simmering 1-2 minutes on low heat. Season with salt and pepper. Plate the steaks with the fried potatoes and sauce on warmed plates, sprinkle with parsley, and serve immediately.
