Italian-Style Potato Salad

Fresh potato salad with vibrant Italian flavors and a touch of Spoonsparrow flair.

Ingredients

  • 1 kg new potatoes
  • Salt
  • 2 onions
  • 250 ml chicken broth (ready-made)
  • 4 tbsp olive oil
  • white pepper (ground)
  • 3 tbsp balsamic vinegar
  • 4 tomatoes
  • 1 bulb fennel
  • 1 bunch Basil
  • 4 slices Italian mortadella

Instructions

    Wash potatoes and cook with skins in salted water for about 20 minutes.

    Peel and dice onions. Cook onion cubes in broth for 5 minutes, then stir in olive oil and season with salt, pepper, and balsamic vinegar.

    Drain potatoes, peel, and slice into rounds. Pour hot broth over them and let steep for 30 minutes.

    Rinse tomatoes, remove stems, and cut into wedges. Clean fennel bulb, rinse, and slice into strips. Rinse basil, dry, and tear leaves. Combine all ingredients with potatoes and garnish with rolled mortadella slices.
