Italian Salad

Ingredients

  • 12 small artichokes
  • Salt
  • 1 lemon (juice)
  • 2 chicory heads
  • 200 g Cherry tomatoes
  • 4 hard-boiled eggs
  • 100 g black olives (pitted)
  • 100 g salami (slices)
  • 100 g cooked ham (slices)
  • 100 g raw ham (slices)
  • 4 tbsp white balsamic vinegar
  • 4 tbsp olive oil
  • pepper (ground)

Instructions

    Wash, trim, and cut off the hard tips and outer leaves of the artichokes. Halve them and cook in boiling salted water with lemon juice for about 5 minutes. Cool briefly and drain well.

    Wash, trim, and separate the chicory into individual leaves. Arrange 7-8 large leaves star-shaped on plates; use smaller leaves elsewhere. Wash, trim, and quarter the tomatoes. Peel and quarter the eggs. Slice olives into rings. Tear the salami and ham into small pieces and arrange all prepared ingredients decoratively on the chicory leaves.

    Drizzle with balsamic vinegar and olive oil, season with salt and pepper, and serve.
