Ingredients
- 1 zucchini (finely diced)
- 1 yellow bell pepper (peeled, seeded, finely diced)
- 2 tomatoes (halved, seeded, finely diced)
- 1 red onion (halved and sliced into thin strips)
- 200 g wheat kernels
- 1 tbsp Lemon Juice
- 2 tbsp white wine vinegar
- 0.5 tsp mustard
- 3 tbsp sunflower oil
- Salt
- Pepper (freshly ground)
- 1 Garlic clove
- 1 pack garden cress
- 2 tbsp chives

Wash the wheat kernels thoroughly and soak them overnight in about 1.5 l water. The next day, cover with soaking water and simmer for approximately 45 min, then strain through a sieve, rinse with cold water, drain, place on a kitchen towel and pat dry.

For the salad dressing whisk vinegar, lemon juice, mustard, salt, and pepper together, then incorporate the oil using a whisk.

Combine the dressing with the prepared vegetables and wheat kernels, let rest for about 1 h. Serve topped with garden cress and chives.
