Ingredients
- 1 ripe Avocado
- 2 Garlic cloves
- 1 red pepperoncini
- Salt
- black pepper (freshly ground)
- Lemon juice
- 8 pieces salmon fillet (about 60 g each)
- 2 tbsp olive oil
- 8 salad leaves
- 4 poppy seed bagels
- 4 sesame bagels

Peel the avocado, halve it and remove the pit. Peel the garlic and chop one clove. Core the pepperoncini and slice into rings. Blend everything with a hand blender, season with salt, pepper and lemon juice.

Heat olive oil in a pan and crisp-fry the salmon fillets on both sides, seasoning with remaining pressed garlic, salt, pepper and lemon juice. Wash and dry the salad leaves. Slice the bagels, spread avocado cream on the lower halves, top with salad and salmon, place the upper halves back on and serve.
