Ingredients

  • 400 g green asparagus
  • 1 onion
  • 2 tbsp butter
  • 2 Tomatoes
  • 8 eggs
  • 50 g Heavy cream
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • 150 g grated Gouda

Instructions

    Peel the lower third of each asparagus spear and trim the ends. Cook the asparagus in salted water for about 10 minutes until al dente, then shock it in ice water.

    Peel and dice the onion.

    Heat butter in a large skillet over low heat, add the onion and sauté for about 5 minutes. Wash, core, quarter, and halve the tomatoes.

    Whisk eggs with cream, season with salt, pepper, and nutmeg, then fold in the cheese.

    Add asparagus and tomatoes to the skillet, warm briefly, reduce heat, pour the egg mixture into the pan and cook on very low heat for 8-10 minutes until set. Preheat the grill to its highest setting and broil the frittata for 3–4 minutes.
