Italian Fondue

Ingredients

  • 3 calf schnitzels (about 140 g each)
  • Salt
  • Pepper (freshly ground)
  • flour (for dusting)
  • 2 Eggs
  • 30 g breadcrumbs
  • 1 tsp Sweet paprika powder
  • 12 sage leaves

Instructions

    Flatten the calf schnitzels with a meat mallet. Season with salt and pepper. Dust with flour, dip in beaten eggs mixed with 4 tbsp water, then coat with a mixture of breadcrumbs and paprika. Cut each coated schnitzel into four strips, roll them up, and secure each roll with one sage leaf and a toothpick.

    Soak the bread in lukewarm water for the meatballs. Peel and chop the shallots; finely chop the capers as well. Knead the ground beef with the squeezed bread and all other ingredients for the balls, season, then shape small balls with damp hands.

    Wash and trim the zucchini. Slice lengthwise into thin strips and brush them with vinegar. Let sit 15–20 minutes until pliable. Cut ham into strips. Layer one strip of ham and one zucchini slice, roll up, and secure with toothpicks.

    Wash, trim, and roughly cube the bell peppers. Clean the mushrooms.

    Fry all prepared components in a fondue pot in hot fat portion by portion. Serve with garlic mayonnaise.
