Italian Christmas Cake

Ingredients
- 42 g fresh yeast
- 250 ml milk
- 600 g flour
- 175 g sugar
- 1 pinch salt
- 6 egg yolks
- 200 g soft butter
- 75 g currants
- 75 g lemon zest
- 75 g orange zest
- 40 ml cognac
- powdered sugar (for dusting)
Instructions

Crush the yeast and dissolve it in lukewarm milk, then stir in flour, salt, and sugar. Mix well, add egg yolks and butter, and knead everything into a dough; let rise to double size in a warm place (oven 50°C).

Mix currants, lemon zest, and orange zest with cognac.

Grease the bottom of a springform pan.

Cut a 15 cm wide by 50 cm long strip from parchment paper and set it as a rim in the pan.

Knead the fruit mixture into the yeast dough and then pour the dough into the pan.

Bake the prepared cake on the lowest rack of a preheated oven at 180°C for about 1½ hours, covering with foil after 1 hour if needed. Remove the finished Panettone and let it cool in the pan.

Serve by removing from the pan, discarding the paper, and dusting with powdered sugar.
