Ingredients

  • 1 cube fresh yeast (42 g)
  • 200 ml milk
  • 500 g flour
  • 125 g sugar
  • 1 pinch salt
  • 2 egg yolks
  • 100 g Soft Butter
  • 75 g raisins
  • 75 g candied lemon peel
  • 75 g maraschino cherries
  • 60 ml cognac
  • powdered sugar (for dusting)

    Crush the yeast and dissolve it in lukewarm milk. Mix flour, salt, and sugar; place in a bowl, create a well in the center, pour in the yeast mixture, then add egg yolks and butter to knead into a smooth dough. Cover and let rise at a warm spot until doubled in volume. Preheat oven to 180°C (356°F) with upper and lower heat.

    Mix raisins, candied lemon peel, and maraschino cherries with cognac. Grease the pan. Cut a 15 cm wide by 50 cm long strip of parchment paper and use it as a border inside the pan. Knead the fruit mixture into the yeast dough, then fill the pan. Bake on the lowest rack in the preheated oven for about 1 hour; cover with foil after half the time if needed. Remove the finished cake from the oven and let cool in the pan. Carefully lift it out, cut into pieces, and dust with powdered sugar before serving.
