Italian Bread Salad

Ingredients

  • 500 g old Italian white bread
  • Salt
  • 5 ripe tomatoes
  • 1 Red Onion
  • 1 cucumber
  • 1 untreated lemon (zest)
  • olive oil (cold pressed)
  • pepper (ground)
  • 4 tbsp black olives
  • 1 tbsp wine vinegar

Instructions

    Cut the bread into bite-sized pieces and soak in cold water with a pinch of salt. Once well saturated, drain and place in a salad bowl.

    Wash and dice the tomatoes; peel and cut the onion into wedges. Wash the cucumber, halve lengthwise, slice, and add to the bowl.

    Wash the lemon and use a sharp knife to shave very thin zest strips (avoid white pith). Cut these into fine ribbons and add to the salad, or use a zester to scrape zest. Drizzle generously with olive oil, season with salt and pepper, and refrigerate.

    Before serving, add wine vinegar and olives, then toss well.
