Ingredients
- 60 g pine nuts
- 100 g basil
- 2 Garlic cloves
- Sea salt
- 100 g freshly grated Parmesan (or Pecorino)
- 150 ml olive oil
Instructions

Toast the pine nuts in a dry pan until lightly browned. Remove and let cool.

Rinse the basil leaves, pat them dry, and pick off the stems.

Peel the garlic and coarsely crush it with the pine nuts and a pinch of salt in a mortar. Add the basil and parmesan and mash together. Gradually pour in the olive oil while stirring until a smooth pesto forms. Season with salt to taste.
