Italian Apple Pancakes

Ingredients
- 2 Eggs
- 200 g Flour
- 300 ml milk (or beer)
- 1 tbsp honey
- 1 pinch lemon zest
- 1 tsp lemon juice
- 3 sour apples
- vegetable oil (for frying)
- powdered sugar (for dusting)
Instructions

Separate the eggs. Whisk the flour with the milk in a bowl until smooth. Stir in the yolks, honey and lemon zest. Beat the egg whites with the lemon juice until stiff peaks form. Fold the meringue into the batter.

Meanwhile heat the oil in a deep fryer or pot to about 170°C.

Peel the apples and remove the core. Slice the apples into ~1 cm thick rings and dip each ring into the fried dough batter. Let excess drip off and fry in hot fat for 2-3 minutes until golden brown, turning once.

Drain the baked apple rings on kitchen paper and dust with powdered sugar before serving.
