Irish Potato Stew with Kale

A hearty Irish potato stew featuring fresh root vegetables and kale, brought to life by a creamy butter‑milk base. This comforting side dish is perfect for any meal.

Ingredients

  • 400 g starchy potatoes
  • 200 g sweet potatoes
  • Salt
  • 400 g savoy cabbage
  • 60 g Butter
  • 4 Spring Onions
  • 150 ml milk
  • Pepper (freshly ground)
  • nutmeg

Instructions

    Peel, wash, quarter the potatoes and simmer in salted water for about 30 minutes until tender. Drain, mash with a potato masher and let steam off.

    Wash, trim and slice the savoy cabbage into strips. Blanch in salted water for 10 minutes, then remove with a slotted spoon and drain.

    Trim, wash, dry and cut the spring onions into rings. Melt half the butter in a large pot, add the onions and sauté until translucent while stirring.

    Pour in the milk and warm gently.

    Combine the cabbage with the mashed potatoes and remaining butter in a bowl. Gradually stir in the warmed milk, mixing well.

    Season to taste with salt, pepper and nutmeg. Serve hot.
