Indian-style flatbread (Paratha) pairs well with many Indian dishes. The simple recipe for the unfilled flatbreads can be found at Spoonsparrow.

Ingredients

  • 6 tbsp Ghee (or clarified butter)
  • 250 g whole wheat flour
  • 250 g Type 1050 wheat flour (or roti flour)
  • 0.5 tsp Sea Salt

Instructions

  1. 1.

Melt 3 tbsp of Ghee. In a large bowl, heap the flours and press a well in the center. Add sea salt, 125 ml water, and melted Ghee; knead well (add an extra 1–2 tbsp water if needed). The dough should not be too firm. Cover with a kitchen towel and let rest in a warm place for about 1 hour.

  2. 2.

After resting, divide the dough into 6–8 balls. Roll each ball on a floured work surface into a thin circle using a rolling pin. Place all flatbreads side by side. Melt an additional 2 tbsp Ghee and rub it over the flatbreads.

  3. 3.

Heat a little Ghee in a pan and cook the flatbreads for 2–3 minutes on each side until golden brown.
