Ingredients
- 1 large cucumber
- 2 cm fresh ginger
- 0.25 bunch mint
- 400 ml sparkling wine
- 100 ml apple juice
- pepper (from grinder)

Peel the cucumber, cut it lengthwise, remove seeds, and dice. Peel and chop the ginger. Rinse the mint, shake dry, pluck leaves, and finely chop. Blend cucumber and ginger until smooth, then stir in sparkling wine and apple juice. Season with pepper, pour mixture into a shallow dish, and freeze for about 4 hours.

When an initial ice layer forms, stir with a spoon. Repeat this process several times.
