Indian-style Roughy Steaks

Ingredients
- 2 onions
- 2 Tomatoes
- 2 tbsp Ghee
- 1 tsp turmeric
- 1 tbsp garam masala (spice blend)
- 1 tbsp red curry paste (hot spice paste)
- 3 tbsp Lime juice
- 50 ml coconut milk
- 200 ml vegetable broth
- 4 roughy steaks (about 180 g each)
- Salt
- 8 coriander stalks

Peel and chop the onions. Wash the tomatoes, quarter them and remove the stem ends. Roughly cut the tomato quarters into small pieces. Heat the ghee in a tall pan. Sauté the onions over medium heat for 3-4 minutes until translucent. Stir in the turmeric powder, garam masala, tomatoes and red curry paste and cook for 1 minute. Add lime juice, coconut milk and vegetable broth and stir. Cover and simmer on low heat for 5-8 minutes.

Wash the fish steaks, pat dry and add them to the sauce. Cook the fish over low heat for 7-10 minutes until done – it is cooked when a bone can be easily pulled out. Wash the coriander, shake off excess water and do not chop too finely. Stir the coriander into the sauce just before serving. Season with salt and lime juice.
