Ice with Meringue

Ingredients
- 300 g fruit (e.g., strawberries, peaches, apricots, raspberries)
- 3 tbsp sugar
- 1 untreated lime (juice)
- 250 g plain yogurt
- 1 Egg white
- 50 ml heavy cream
- 4 egg whites
- Salt
- 150 g powdered sugar

Wash, peel, and dry the strawberries. Blend them into a puree and strain if desired. Reduce sugar with 2 tbsp water to a syrupy consistency, cool, then mix with strawberry puree, lime juice, and yogurt. Whip one egg white and cream until stiff, fold evenly into the fruit mixture. Freeze the batter in a shallow metal pan, stirring every half hour.

Place molds in the freezer as well. When the mixture is half-frozen, fill the molds, insert sticks, and freeze for another 3-4 hours.

Preheat the oven to 220°C (428°F) on top heat.

Whip one egg white with a pinch of salt until stiff, gradually adding powdered sugar and continue whipping until glossy and peaks form.

Spread the meringue loosely over the ice in the oven and bake for about 4 minutes until golden brown peaks appear.
