Melon Ice Cream with Pistachios

How about a cool melon ice cream with pistachios? The delicious ice cream from Spoonsparrow is summery fresh and light.
Ingredients
- 1 kg watermelon (0.5 whole watermelons)
- 50 g honey
- 40 ml lemon juice
- 100 g Dark chocolate (at least 70% cocoa content)
- 70 g pistachios
- 2 egg whites

Line a loaf pan with plastic wrap and place it in the freezer.

Cut the watermelon into wedges, remove black seeds and scoop out the flesh. Blend the melon flesh in a blender and season with honey and lemon juice. Chop the chocolate and pistachios, fold them into the fruit puree. Whisk the egg whites until stiff and gently fold them into the mixture as well. Pour the mixture into the loaf pan and freeze for at least 6 hours.

When ready to serve, pour the ice cream onto a plate, remove the plastic wrap and cut into slices.
